APPLE - PECAN PANCAKES


Directions

INGREDIENTS
1 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
3 tbsp. sugar
3/4 tsp. cinnamon
2 med. apples, peeled, cored & chopped
3/4 c. pecans, chopped
1 1/4 c. milk
2 eggs, well beaten
3 tbsp. cooking oil


METHOD
Mix dry ingredients in medium bowl, add apples and pecans and toss. Blend milk, eggs and oil in large measuring cup. Add to dry ingredients and mix lightly, just until batter seems moist. Preheat skillet to 375 degrees. Grease lightly (test to see if hot by dropping drops of water on pan to see if they bounce.) If batter seems thick, spread it out with back of spoon. Bake 2 minutes on each side. Turn after bubbles appear.
