SUGAR FREE FRUITCAKE


Directions

INGREDIENTS
1/3 c. butter, softened
2 tsp. low calorie sugar replacement (optional)
1 egg
1 1/4 c. all-purpose flour
1/4 c. pecan meal
1/4 c. raisins, chopped fine
8 oz. pkg. sugar free dried fruit, chopped fine
2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. cinnamon
Dash of nutmeg, cloves, allspice
1/4 tsp. coconut flavoring
1/4 tsp. hot cinnamon flavoring
2/3 c. unsweetened orange juice
1/2 c. pecans, chopped fine
1/3 c. grated fresh coconut


METHOD
Put your raisins and your dried fruit in your orange juice. Cook 1 minute on high in microwave; set aside. Beat egg and butter and then add remaining ingredients. Mix until well combined. Batter will be fairly thick. Spray your loaf pan with Pam. Bake at 350 degrees for 25 to 30 minutes. Please make sure and read labels to get your juice and fruit with no sugar. Enjoy and thank you
