INGREDIENTS
1 c. oatmeal
1 1/2 c. boiling water
1 c. butter
1 c. brown sugar
1 c. sugar
2 egg whites
1 1/2 tsp. soda
1/2 tsp. salt
1 1/3 c. flour
2 tsp. cinnamon
1 tsp. apple pie spice
Raisins, nuts, coconut (optional)


METHOD
Pour water over oatmeal and let stand for 20 minutes. Cream butter sugars, spices and soda. Mix well with rest of ingredients. Bake at 350 degrees in greased 13 x 9 inch pan for 30 to 35 minutes.

OPTIONAL TOPPING:

8 tbsp. melted butter
1/2 c. brown sugar
1 tsp. vanilla
1/2 c. pecans
1 c. coconut

Brown all ingredients in broiler. Pour over hot cake
